This blend typifies the 2011 characteristics: mid summer and sufficient hydric conditions that provide a wealth of phenolic and aromatic maturity without excessive levels of sugar.

Harvested between the 4th and 10th of September, full berries are
pressed in a pneumatic press, and then fermented in stainless steel at low temperatures.

Tasting notes:

this cool, pale-pink wine details the intricate flavors of freshly crushed wild strawberries and mint, enhanced by floral notes. The palate isone of freshness and complexity, with an interesting mineral character at the finish.
